Ingredients

  • 100 g Sweet Potato
  • 80 g Pumpkin
  • 15 g Mayonnaise
  • 30 g Yogurt
  • 10 g Sugar

Instructions

  • Without removing the skin, dice the sweet potato and pumpkin, then place in water for about 5 minutes.
  • Move the sweet potato, pumpkin, and water into a microwave safe dish. Lightly cover with plastic wrap, then put in the microwave at 600W for 7 minutes.
  • Once the sweet potato and pumpkin pieces have softened, move them into a bowl and mash them while they are still warm. Be sure to mix in the sugar while doing this.
  • Once the sugar has melted, finish up by mixing in the mayonnaise and yogurt.

Notes

The tartness of the yogurt makes this a refreshing potato salad. If the sweet potato and pumpkin are not sweet enough, please adjust the amount of added sugar. I recommend chilling the salad before eating.
